Carrot Mango Smoothie 1I record shows from the Food Network Channel.  Yup, I’m that dork.  But what’s fun is that on those days when the kids are playing together without fighting, so they don’t need my undivided attention, but they’re having so much fun that they’re too loud for me to think too hard or listen to the television, on those days I can go to my DVR and see what some of my favorite chefs have been cooking.

This week mangoes are on sale so even though mangoes aren’t one of the top five of my favorite fruits, I’ve been inspired to make a few of my favorite mango recipes.  This recipe is from Bobby Flay.  Everything he makes looks delicious, but I have to admit that I tend to watch all the steps he goes through to make something and try to figure out which ones I could skip and still come up with something yummy.  This is a smoothie, so yeah, not too many steps here. 🙂Carrot Mango Smoothie 2

The only difference between my recipe and his is that he uses carrot juice.  Thanks to my amazing BlendTec, that my husband bought for me a couple years ago on my birthday, I just used carrots in mine and voila, carrot juice!  It’s kinda funny that this is titled “Carrot Mango Smoothie” because it definitely has a strong orange flavor as well, but I figured Orange, Carrot, Mango, Banana smoothie was a little much.

My kids know that carrots help our eyes because I’ve told them enough times to encourage them to eat carrots.  What I didn’t know before today was that carrots also contribute to healthy skin and they cleanse the body.  I’m not sure I’ll ever see my kids drink carrot juice solo, but they approved of this smoothie!

Carrot Mango Smoothie Title

IngredientsCarrot Mango Smoothie 3

  • 2 cups orange juice
  • 2 carrots, chopped
  • 1 large ripe banana, broken into chunks
  • 1 large ripe mango, peeled, pitted and chopped
  • 1 cup ice

 Directions

  1. Pour two cups of orange juice in blender.  Add banana, carrot pieces, and mango.
  2. Blend until juiced.  For a BlendTec, I pushed the “whole juice” button.
  3. Add ice and blend to desired consistency.
